That's what I suspected. So now that I expect to provide my own writing, any
ideas where I can find some documentation on CEF? I have the docs for CFF -
and I know they are essentially the same - but that much info will probably
land me in trouble :) .

While freetype allows you to open up and read a font file, I don't see any
file -writing- capacity... That is, if you supply the writing capacity, then
you could use freetype as the reading component, and thus have your
converter.
