OK, this is nothing whatsoever to do with GRUB.

First off, does your live disk have LVM2 installed on it ? Last time 
I used an Ubuntu installer (to install a MythBuntu MythTV frontend) I 
was "surprised" to find it didn't support LVM - but luckily I'd kept 
a spare partition around to cater for future experimentation.

So first off, if you do "pvscan", does it list anything ?

Does "lvm pvdisplay", does it show anything ?

If these fails, I'd suggest trying a different live disk (Knoppix is 
very good) - it may be as simple as your live disk not supporting LVM.
