This works great.
But actually I'd prefer to use the \score block in a command that
would take only the notes as argument. ;p
Your solution does not work for a \score block within a music function.

scoreTwo = #(define-music-function (parser location foo)

\markup \score {
$foo
\layout {}
}
#}
)
\markup {
\column {

}
}
