there's whiteout property that you can set to ##t:

  \override Hairpin.whiteout = ##t
  \override Hairpin.layer = #2 % maybe necessary to place hairpins in front
of other objects
  r2\< r r r\!
}

left = \relative c' {
  r2 r r r

    \new Staff = "right" \right
