I would use the standard LaTeX commands for it:
\header{ title="Dark Blues in D$\flat$" }
or
\header{ title="I can't C$\sharp$" }
Strangely, the LaTeX symbols for sharp and flat are considered as
mathematical symbols. That is why you have to go to math mode (by
enclosing them in dollar signs).
