I'm working on using lilypond to create interactive sheet music -- the computer makes up a few bars, displays them, then listens to a musician(s) playing the music, and creates new music based on it. I'll probably be making a public release in a week and a half, but I could send my current stuff to you if you're interested. I'm using OSC to send messages to a perl script, which translates the numbers into lilypond code and sends it to a lilypond server.
This wouldn't be useful for simply entering existing music, though. I'd look into other people's suggestions for that.
