Ok, fair enough. I am meanwhile using

\ifPreview\else
...
\fi

around stuff that puts unwanted specials into the DVI file. That way I 
can use the default options for dvipng again.

Now that you mention that ... I think this is to be expected. 
preview-test.1 is MetaPost output, ie, very simple EPS. But all font 
references use only the TeX name, no fonts are included. IIRC it is 
possible to register the TeX fonts with gs so that gs can cope with 
MetaPost output directly. But I haven't done that, since dvips and 
pdfTeX do the right thing. So it looks natural that a direct call to gs 
fails, whereas dvips plus gs works.
